Sandra Cordero Popping Up Next Week at Royal/T

Royal/T’s days are numbered in Culver City, but it’s going out with a bang prior to its closing at the end of the month. Next week, the restaurant and art space will welcome back Dutch chef Sandra Cordero for a two-night pop-up of her Cordero Negro concept, which features her take on produce-lead Spanish cuisine (her father is from Espana and she spent many of her summers on a farm in Galicia, hence the tapas obsession).

Cordero, a former apprentice to Neal Fraser who staged at Providence and worked with the city’s top chefs at Test Kitchen, will prepare a $45 menu of twelve different tapas on July 26 and 27, featuring twists on traditional dishes like meatballs in spicy tomato sauce with flan and strawberries, gambas al ajillo, and piquillos stuffed with herbed goat cheese. Seats are available from 6:00 to 9:00 on both evenings, with reservations available on her website.
