What You Missed at Last Night’s Blue Belly BBQ Preview

If the food served for last night’s Blue Belly BBQ preview at Southwark was any indication of the what we can expect from Gene Giuffi’s forthcoming foray into smoked, grilled and encased meats, the city’s going to have the potential for a pink, smoke-ringed game-changer in its midst. Meats on offer included spicy (but not too spicy) jerk chicken legs, heavenly and tender smoked short rib, and near perfect pulled pork and ribs. There were also garlic and oregano sausages, and some stellar sides, including mac and cheese, collard greens, cole slaw and more. Blue Belly, you’ll recall, is Giuffi’s follow up to his well-received Cochon. It’s slated to open in July across from the Bella Vista BYOB in the former home of old-original Little Fish.
