Los Angeles magazine reports that former Son of a Gun and Animal chef, Miles Thompson, is bringing his Vagrancy Project into public view, with a pop-up overtaking Echo Park’s Allston Yacht Club. Starting June 11 and recurring twice-a-night every Monday and Tuesday through August (with a few vacation days thrown in when Thompson will not be there), the chef will prepare a $70 five-course pre-fixe, following up on the themed pop-ups he ran from his own apartment that Squid Ink enthusiastically raved about in March. What’s different this time around?

Rather than offer a pay-as-you-wish concept, as the chef previously did, Thompson will charge diners’ credit cards $88 in advance, with extra options of a $50 drink-pairing and random refills payable post-repast. Thompson plans to build on this “Phase 2” of the Vagrancy Project with a brick-and-mortar restaurant named Cottage once funds are raised for its opening.
