“If you can’t beat ’em, eat ’em,” is the motto of a new breed of gastronomes emerging. They call themselves “invasivores,” and they’re consumed with ridding the landscape of meddlesome interlopers wrongly introduced into local habitats, one delicious dish at a time. Here in Philly, Newsworks reports, that means taking on the fearsome and most reviled “frankenfish” better known as the Snakehead. The seemingly unstoppable, uber creepy and highly invasive fish has been reaping terror for scientists and anglers since first discovered in local waterways back in 2004. But starting next week, invasivores will get the chance to bite back, when Supper cook Kris Sandholm puts the snakehead on the menu at the South Street restaurant.
Sandholm served the fish at his now defunct Bethlehem-based restaurant prior to joining the kitchen crew at Supper. He describes the fish as having moist flesh, a soft texture and a flavor that’s more mild than tilapia or cod. Here’s to being at the top of the food chain!
