“Who knows, we may go over and help Edzo’s out if we get bored,” M Burger Chef Tim Hockett says. This is just a joke, coming as it does right after he revealed that he expects to make somewhere between 4000 and 10,000 burgers a day at M Burger’s Lollapalooza stand. By comparison, between them the three existing M Burger locations currently make… 4000 burgers a day. So a slow Lollapalooza day would be as big as the whole chain, and a busy one would be where they hope to be by 2016 or something. We met up with Hockett outside the Huron location, where he revealed a number of interesting things about the Lettuce Entertain You burger chain— like Eddie Lakin of Edzo’s, they did a lot of classic burger-eating around the midwest to determine what made a burger great; the fries are from Washington state and were chosen because a higher starch content makes for a crispier fry; and they deliberate aim for a shake you can actually drink with a straw, figuring that downtowners on a lunch break don’t have time to eat it spoonful by spoonful.
