
The team that runs the Hotel Adagio (recently sold and now managed by Southern California-based Evolution Hospitality) is revamping the restaurant and bar for the second time in two years, perhaps hoping to draw more people to the new bar program. As the Scoop reports, the new concept for the Bar Adagio bar/lounge space will be called The Mortimer (550 Geary Street), and it sounds like they’re trying to recruit a budding bar star or two to helm a buzzworthy cocktail program. Also, they’re separating out the restaurant portion, once the successful Cortez, and will rebrand it as The Green Room, aimed primarily at hotel guests, with a new chef and menu to be announced soon.
