
Did executive chef Craig Schoettler know that he was going to be let go from The Aviary? Who knows, but there’s certainly no sign of it in a video which The Daily Meal shot just last Thursday. Schoettler and mixologist Michael Melton demonstrate a cocktail for The Daily Meal’s Ali Rosen, which involves making freakishly sharp ice with an ISI canister and liquid nitrogen. When Rosen observes that they’re having a lot of fun at work with this stuff, Schoettler replies: “If you don’t have fun while you’re at work, then why bother.” Watch the five-minute video here.
