Last we heard from The Brite Spot, it was being possessed by Pacino and Christopher Walken. Today LAist reveals that Echo Park’s nearly hundred-year-old food server (which started as a food stand in 1919 before becoming a restaurant in 1949), is undergoing some big changes. Dana Hollister, owner of Cliff’s Edge, One-Eyed Gypsy and Villains Tavern, recently became a full owner of the space and plans to revitalize the diner’s image with new menus and a new look. While the kitchen gets gutted, a 40-seat patio, unseen from the street, will be constructed in a part of the restaurant’s parking lot and bike racks will placate the cool kids. Another encouraging development finds chef Darby Aldaco, formerly at Animal, Absinthe, and One-Eyed Gypsy, planning to unroll a brand-new menu on July 4 that includes a “chicken-fried chicken” sandwich and deep-fried pork ribs.
