He ain’t just whistlin…

At long last, Joseph Humphrey’s southern-inspired Dixie opens in the Presidio this very afternoon. The restaurant replaces Pres a Vi at 1 Letterman Drive, right near where Chestnut abuts the edge of the Presidio at Lyon Street, and it’s a handsome, modern space which just got a remodel from designer Michael Brennan. Humphrey has kept the menu under wraps until today, but we’ve got it for you now, and it includes things like roast rabbit with bacon, black cod with bourbon and red miso, and twists on southern comfort foods like “dirty rice-style” risotto; chicken-fried quail with a roasted-garlic waffle; and halibut with sassafras and sea urchin remoulade.

Also, there are desserts like chess pie, and coconut layer cake with roasted pineapple.

Here’s the dinner menu, and the illustrated tasting menu, for your perusal. They’re also opening up for lunch today, with a limited menu.

Check out our slideshow, and take note of the chef’s counter, where Humphrey will be inviting guests who order the tasting menu to enjoy one of their courses in the kitchen — which sounds fun but could get tricky if too many people order the tasting menu at once? Anyway, you can also expect a short a la carte menu, and a cocktail list heavy on the bourbon.
