Benu chef Corey Lee is speaking today at 4 p.m. on the subject of science and the culinary arts, and “the increasingly parallel technologies behind modern cooking and bioscience.” The lecture will also feature demos of some of Lee’s emulsions and gels, which are actually also techniques used in laboratories.
