The Roost Southern Food Truck Now Rolling

Is fried chicken this year’s pork belly or gourmet burger or whatever? We don’t know, but it certainly seems to be the latest traditional food enjoying an artisanal renaissance from people who want to get back to making it the right way. It’s not the only thing being served by a new Southern food food truck called The Roost, but with a chicken reference right in the name, it’s as good an example of what they intend to serve as any. Thrillist and Eater both have reports today on The Roost, the brainchild of a North Carolina native named Joe Scroggs, who plans to serve down-home dishes ranging from buttermilk-brined chicken (served with a biscuit, of course) and Brunswick stew to baked pimiento mac and cheese and peach cobbler.
