Kristine Subido Leaving Wave To Make Mom’s Filipino Chicken

Chef Kristine Subido, whose Asian-inflected menu at Wave in the W hotel on Lake Shore Drive has included a chicken special called A Bucket of Chicken (but not, thankfully, balut), is leaving the hotel in April. Her plan: to open a fried chicken place in Uptown called Pecking Order: A Chicken House, which will feature her mom’s Filipino chicken marinade, made from soy, vinegar, garlic, sugar and other spices. The marinated chicken can then be fried, roasted or grilled, and will be served on its own or with accompaniments such as banana ketchup or gravy. The restaurant will serve beer and alcohol punches and the Filipino dessert halo halo.
