In Fine Spirits To Become Premise Under Chef Brian Runge

Andersonville wine bar In Fine Spirits was last seen changing its entrance around and making its second floor more accessible in the wake of chef Marianne Sundquist’s departure. Brian Runge was last seen leaving his job at Graham Elliot to kick back with a new baby for a month or so. Guess who’s now gotten together? In Fine Spirits is set to reconcept entirely as a new restaurant called Premise, with Runge in the kitchen. In Fine Spirits will close March 18, and with it the “wine bar” small plates concept will go out the door, to be replaced by a proper restaurant, with Runge making the kind of Asian-influenced modern entrees that he served at Graham Elliot. The bar will remain a bar serving smaller appetizers (which probably means you can still sit there and wait for your Great Lake pizza… at least if you’re discreet), while the upstairs will become Salon at Premise, a sort of lounge with a darker “whiskey baron’s lair” feel, and a 10-person private lair. One thing that isn’t changing: the wine shop of the same name next door (owned by some of the same owners).
