Dan Moody Popping Up At Raphael With Beef Heart Tartare and Uni Ice Cream

Dan Moody is on the move again, following up his recent pop-up stint at Batch. Next the former LudoBites sous will team up with Adam Horton on April 17th for a one-night only collaboration on a six-course menu at Raphael. The chefs plan to tag-team your palate, with Horton serving the first dish of amberjack cured with palm sugar, chased by scallop crudo with a very Ludo-sounding uni ice cream with sesame crumble and a spicy tomato dressing. What else?

Horton takes the next step and so on and so forth until you’re dripping in Dan’s dessert called “chocolate decadence,” a partnership of flourless chocolate cake with Grand Marnier custard, orange and port sauces, vanilla cognac whipped cream, and three shades of chocolate mousse (white, milk, and dark). In between, Moody plans a beef tartare using cow’s heart and boudin noir with roti paratha and yellow curry, while Horton will add a quail with kaffir lime, coconut, and green curry, as well as 48-hour braised veal cheeks with creamed morels.
