Tom Colicchio is expanding his restaurant empire yet again, this time in the Hamptons. Colicchio’s team tells us he plans to open a new restaurant and inn in Bridgehampton called Topping Rose House. Details are still scarce, but the operation will be located in an historic home originally built in 1842 (it’s undergoing a complete restoration). The aim is to open by summer and operate year-round.

Update: Colicchio gets in touch with a little more information. The whole project will involve the main house and four cottages. “The inn is a way for me to expand into a different area of hospitality,” Colicchio says. The actual restaurant will have 85 seats, and the vegetable-focused menu will be “contemporary American leaning toward an Italian sensibility.” The team has also taken over a nearby acre of land, which they’ll use to grow their own produce. Colicchio’s reasoning: “More people are starting to eat this way.”
