What Roy Choi is Cooking with Mark Peel at Tar Pit Next Week

Here we have the first look at the a la carte menu that Kogi-creator and A-Frame/Chego/Sunny Spot chef Roy Choi and Campanile legend Mark Peel have put together for their one-night collaboration dinner next Wednesday night, February 29th, at Peel’s Tar Pit in Hollywood. As one might expect, it’s a truly L.A.-representative menu riffing on recipes both classic and street. What’s going to be served?

The two unlikely bedfellows have four dishes and three sides to accompany two beer-based cocktails and one smoky tequila drink que se llama “Viva the Raza.” Choi kicks things the menu off with a burger on a La Brea Bakery bun, toting meat from Harvey’s Guss with aged cheddar. Peel hits back with a promising prep of choucrote garnie a la Koreatown, with kimchee sauerkraut, house-made ginger sausage, and brine and maple-glazed pork belly. The two then commit an “uni abalone felony” together, testing their new-found friendship with a night in the clink.
