Many a New York transplant has likely noticed how little Greek food there is in San Francisco, especially of the cheap gyro variety. Well, now a Michael Mina vet is looking to fill that void with Souvla, a fast casual restaurant for which he’s still seeking investors, and a location. As Tablehopper reports, it’ll be like an Americanized Greek “taqueria,” with fresh, spit-roasted meat like lamb porchetta (!) carved up for pita sandwiches, with your choice of sauce. The owner is Charles Bililies, who has lately been operations manager for RN74. We look forward to tasting one of these things at an event in the near future. [Tablehopper]
