A couple of days ago we offered our preview of the dishes that chef Michael Shrader would offer at the soon-to-open Urban Union. Now he’s doing the job himself in a three-minute video, in which he shows how he makes a bowl of wood-grilled shellfish. Compared to a lot of the video previews that restaurants put out, which are all about setting a hipster mood, we admire this one for just showing us a craftsman at work making a simple, high quality dish that we’re craving right now (and we love that we learned a new technique— watch how he pounds the lemon peel).
