The Trenchermen, aka brothers Mike and Patrick Sheerin, made their debut to media folks a couple of weeks ago; now the public has a chance to test out one side of their operation Wednesday night starting at 9 p.m. This one is a beverage preview, showcasing mixologist Tona Palomino, who they recruited from Mike’s former employer, WD-50. To judge by what we had at the media preview, Palomino is doing some very interesting things, not retro cocktails but using a lot of fresh flavors and unexpected techniques, and the two cocktails he’ll be offering (at a ridiculously reasonable price of $7 each) are a carbonated candy-cane infused gin with clariied pear nectar and lemon juice, and a carbonated celery gin and tonic and Batavia Arrack, pineapple juice, all-spice liquor and sparkling wine. The event is being held at 711 N. Damen, which Googlers will quickly determine is the side door of Bar Deville, and admission is free.
