Savory Beefs Up Monday Night With Burgers

William S. Burroughs once reflected, “This is a war universe. War all the time. That is its nature. There may be other universes based on all sorts of other principles, but ours seems to be based on war and games.” Chef Paul Shoemaker is bringing his own war games to Savory in Malibu, with a new Monday night special called “Burger Wars.” Inspired by Shoemaker’s own Monday “Pub Night” menu, the battle concept, intended as a bragging contest between you and your friends as to who has the best burger, is a little shaky. The big burgers, coming in a range of aggressive styles, are totally solid. What can you expect?

Shoemaker and company are designing a fun selection of slanted burgers with names sometimes inspired by bands, but always worthy of battle bots. There’s a Wolfmother burger that plays on a charcuterie plate, with an eight-ounce beef patty, balsamic onion compote, blue cheese, brie, arugula, and aioli, as well as a sporadic serving of the Yardbird, a burger with chicken and bacon. The Four Horsemen burger is a truly apocalyptic dose of double double, with two six-ounce rib eye patties, a layer of pork belly, bacon, American cheese, and sweet caramelized onions on a bun.

Elsewhere, Shoemaker is making a Dungeness crab cake burger and a Tug Boat burger with tempura catfish or cod and heirloom tomatoes, as well as sides like hand-cut fries, tempura onion rings, and a salad.
