As coffee’s third wave continues cresting over the city like a piping hot tsunami, caffeine enablers Jonathan Adams and Damien Pileggi, the duo who recently brought us Rival Bros Coffee, are rolling out Finca Concepcion Pixcaya, the first in series of single-origin, custom roasted coffee. They started selling it this morning from their mobile cafe and online. According to a prepared statement, Adams and Pileggi procured Finca Concepcion Pixcaya’s beans from a specific micro-lot on one farm near San Juan Sacatepequez, Guatemala. Pileggi, who’s billed as an artisanal coffee expert, gave the beans a light roast to eke out a complex, but balanced brew full of hints of brown sugar, chocolate, caramel and acidity. Here’s hoping the fancy new brew doesn’t bring about a coffee war like those out on the West Coast.
