Last we heard, chef Joseph Humphrey (formerly of Murray Circle) was hoping against hope to open Dixie (1 Letterman Drive) before the new year, but that obviously isn’t happening. Today the Scoop brings word that Humphrey will be doing an out-of-town tryout of sorts, cooking a two-week series of preview dinners at Oakland rotating pop-up venue Guest Chef, from January 3 to January 15. There’s still no definitive opening date for Dixie, but given this latest development we’re going to push it out to late January or early February.

You can make reservations and see more info here, on Dixie’s new website. But for those like us who’ve been curious to understand what Humphrey would be doing to creatively modernize Southern food, you can see some menu items below. Standing out most for us are things like chicken-fried quail with a garlic waffle and spicy cabbage; compressed persimmon and roasted maitake salad, with pecans, parsley, and cocoa nibs; and creamy grits, with a poached egg, sea urchin butter, and duck cracklings. Sold.

All the preview dinners will be prix fixe, two courses (with options for each) for $35, with pairings available as well.
