As he admits himself, Serious Eats Chicago has only been in operation for the past month and a half. Still, having put in a great deal of time eating for Grub Street and the Paupered Chef, we’re confident that editor Nick Kindelsperger knows where to find a good meal. Among his eight favorite bites listed for 2011: the tripe tacos from from La Chaparrita Taqueria #1, Caneton Rouennais à la Presse Duck from Next, and those irresistible glazed chestnut doughnuts from The Doughnut Vault.
