Tonight being the first Monday of the month can only mean one thing: Industry Night at Amis. And for this round Amis chef Brad Spence and team Vetri welcome the Fork and Fork:etc. crew for a Fall Harvest feast. Fork’s Terence Feury is bringing Long Island cheese pumpkin soup with gruyere and sour dough croutons, oyster stew en vol au vent, and crispy brussels sprouts with coriander and Meyer lemon jam. For their part, Spence and company will prepare turduckens, with cornbread and chorizo stuffing, candied sweet potatoes and more. Things get underway at 10 p.m. As always, a recent paycheck stub from a restaurant gets you in.
