
Following a series of minor setbacks on the construction and inspection fronts, Vedge, the “vegetable restaurant” from former Horizons owners Rich Landau and Kate Jacoby, is finally cleared for takeoff. Landau and Jacoby got their mock service and friends and family dinners out of the way over the weekend, and last night hosted a preview party, where they served vegetable dishes, seitan, tofu banh mi, and steak spice seared tofu, according to Living on the Vedge’s Kelly White-Phillips.
