Sushi places open up so quickly these days that we hardly know where to start, but Union Sushi + Barbeque Bar in River North seems to be working hard at differentiating themselves from the pack. Their latest announcement certainly suggests ambition: starting tonight on weekday nights, Chef Chao will be serving a Chef’s Table omakase dinner, made on the fly in front of you as you dine. There are two seatings (6 p.m. and 8:30 p.m., Tuesday through Thursday only) and two prices (5-7 courses for $60, 8-10 for $80, with sake pairings at $25 or $40), and the menus are tailored to your likes and dislikes as you sit there watching Chef Chao at work. They even made a video about it, which since there’s no written menu (it’s all based on whatever fresh fish was available that day), is as close as you’re going to get to what you’ll be having. And finally, 10% of the price of each Chef’s Table meal will be donated to a charity, chosen monthly; this month’s is Share Our Strength. Reservations can be made here; watch the video below.
