
Though the pairing seems a little unlikely, Scott Schroeder, the chef behind the venerable South Philadelphia Tap Room, Scott Dogs and the still not-yet-opened American Sardine Bar, dropped word that he’s teaming up with Jen Carroll, Top Chef alum and the former top toque at Eric Ripert’s 10 Arts, for two special dinners in conjunction with Allagash Brewing Co., and Collegeville’s The Longview Center for Agriculture. The first of the two dinners takes place at the Tap Room on November 30, and will feature a five-course classic New England menu, with such creations as marinated Wellfleet oysters, sea urchin potato-salt cod fritter, potato-salt cod fritter, celery remolade, foie gras tourchon, and cranberry gastrique; chowder style little neck clams, milk braised Country Time bacon; and Meyer’s all natural beef shortrib pot roast, mashed potatoes, and root vegetables (full menu below). The second one will take place at the Longview Center, with the date and details to TBD.
Allagash Beer Dinner with Guest Chef Jennifer Carroll
1st course: day boat scallop capaccio, shaved celery, cracked pepper, chilled cherry tomato-horseradish infused vodka, paired with Allagash White
2nd course: chowder style little neck clams, milk braised country time bacon, paired with Allagash Little Big
3rd course: skate wing, squash puree, brown butter, paired with Allagash Grand Cru
4th course: classic lobster newburg, paired with Allagash Triple
5th course: Meyer’s all natural beef shortrib pot roast, mashed potatoes, root vegetables, paired with Allagash Black
cheese: cabot cloth bound cheddar, honey crisp apple jam, oat streusel, paired with Allagash Dubbel
dessert: maple bread pudding, bourbon ice cream, paired with Allagash curieux
