Nopalito (306 Broderick) was born when two line cooks at Nopa kept impressing chef-owner Laurence Jossel with their amazing Mexican staff meals, and after saying “We should open a Mexican restaurant” a bunch of times, he finally got serious about it. Earlier this year we learned that they’re opening a second location in the Sunset, at 1224 9th Avenue (at Lincoln), and today SFoodie publishes the second part of a three-part interview with co-chefs Gonzalo Guzman and Jose Ramos. They explain how they adapt traditional Mexican recipes using local, organic ingredients and modern techniques — Guzman’s experience was primarily in fancier, Euro-centric kitchens prior to this — and they talk about how they’ll maintain quality at both spots once the new one opens early next year. “I know when a lot of restaurants open a second location they tend to forget about the first location,” Guzman says. “We’re going to try to not let that happen.” [SFoodie, Earlier]
