
Matt Eversman, the former Saigon Sisters and May Street Market chef whose OON is one of the most anticipated openings of the next year, has picked a location—smack opposite The Girl & The Goat, where he staged during the summer. OON Chicago, as it is now officially called to distinguish it from any other OON, will be a 70 seat restaurant with bar seating for 12-14 and outdoor seating for up to 20 at 802 W. Randolph, which our exhaustive online search reveals was previously something called Pasha Chicago. On the restaurant’s website, Eversman explains a little more about his intentions for OON: “The food focus will be a broad Southeast Asian style that borrows from many cultures… I picked the West Loop area because I want us to be where Chicago’s serious diners go to find really different and exciting approaches to food.”
