Hopson leaves Le Cirque.

Apparently it’s the season of white truffles and chef resignations. Gael Greene says that Craig Hopson is leaving Le Cirque to open his own place. He says, “I could stay. The family has been good to me. But I would be in the same place five years from now.” The new place? It’s somewhere on the LES, and the rest is a mystery. Sirio Maccioni is currently looking for his replacement. Meanwhile, Eater confirms that Chris Jaeckle, the chef de cuisine at Ai Fiori, is out and that chef Bianco himself is filling in, for now.
