What to Eat on the Haven Pop-Up Menus at Plum, From Chef Kim Alter

As the East Bay (and the non-East-Bay-averse foodie universe) awaits the late fall/winter opening of Haven in Jack London Square, executive chef Kim Alter is offering up her first hints of what she’ll be up to via a menu for an upcoming pop-up at sister restaurant Plum. We’re happy to say, it sounds sort of in line with the excellent, very American food she was doing as the opening chef at Plate Shop in the spring. Alter’s been helping out in the kitchen at Plum — which like Haven is also under the ownership and artistic direction of the Daniel Patterson Group — while waiting for Haven to open, Alter will be doing Haven pop-ups on Tuesdays through November 15, with the first one actually falling on a Monday, October 17.*

It’s a four-courser for $60, and as the Scoop relays, the first week’s menu will look something like this (subject to change). Also note that you can get cocktails now from the soon-to-open Plum Bar, via a little window between the spaces, at Plum.

snack - Farm and Barn
crisp chicken skin and fried potato skins
chicken skin cooked in between silpats dusted with espelette, potato skins-cooked then fried and dusted with an onion powder, served in a cup/bowl on the table.

“artichokes” salad
braised and fried artichokes, carmelized sunchoke stew, shards of pecorino, chicories dressed in a banyuls vinaigrette

clams for two
clams deglazed with bourbon, bacon stock, lardons, charred turnips, agretti, toasted bread with turnip-green salsa verde

seared short rib with fall tastes
seared short rib, fork-smashed potato, braised mustard greens, onions, olive oil, confit baby fennel rich demi sauce with roasted garlic cloves

lemon souffle for two
ricotta filling
