Terragusto Owner Opens Ripasso in Bucktown

Theo Gilbert, who recently closed both his five-year-old Terragusto in Roscoe Village and a second branch in Lincoln Park, has opened a new Italian restaurant in Bucktown at 1916 N. Damen. Called Ripasso for a technique popular in wines from the Valpolicella region, of “repassing” the skins and seeds from one kind of wine into another to make more complex flavors, Ripasso’s menu will be similar to Terragusto’s in terms of handmade pastas and bread baked in house. But as the name suggests, where Terragusto was BYO, Ripasso will offer an extensive Italian wine list and a full bar with cocktails. Gilbert also plans pasta-making classes and wine dinners, as well as takeaway and delivery lunch service. [Eater]
