
Though the trendiest of trend spotters told us at the end of last year that we all would be eating nothing but pie at nothing but restaurant and chef pop-ups throughout most of 2011, neither has gained much traction in the City of Brotherly Love. In spite of all that crystal ball-gazing hog wash, Green Eggs owners Stephen Slaughter and William Bonforte are going to preview the goods they plan to serve at their almost-ready all-American concept, Stateside, with a pop-up at their old, original Dickinson Street outpost on October 29. Meal Ticket reports that newly appointed chef George Sabatino will serve a selection of dishes from his forthcoming menu, and with things like housemade rabbit rillettes and goat cheese going side-by-side with dishes like seared skate wing and beer braised beef cheek, the anticipation of Stateside’s debut ratchets up just a little bit higher.
