
Guillermo Tellez, chef at Hotel Palomar’s restaurant Square 1682, is getting into the spirit of fall with a newly launched menu. Staying true to his “American with world flavors” philosophy, the chef pairs the season’s usual suspects with flavors from around the globe. Cinderella pumpkin mingles with apples, chestnuts and salsify in an Indian-spiced lobster bisque, and a lamb ragout gets paired with sweet potato gnocchi, while smoked duck, scrambled duck egg, lobster and rosemary potato gallette come together under the heading of “Breakfast in the Evening.” Check out the full menu straight ahead.
