The Reader’s James Beard Foundation-award-winning Key Ingredient series of chef challenges has already featured one Top Chef. And who knows? This week it could be featuring another. In any case, Beverly Kim of Aria in the Fairmont Hotel is this week’s chef, attempting to make a Halloween dessert out of black cardamom, which has a distinctly different smoky flavor from green cardamom. And she’ll be one of six cheftestants from Chicago being cheftested when the new season of Top Chef premieres next Wednesday.
