We finally get word of the name for the Ritz’s in-progress make-under/ makeover in the former Dining Room at the Ritz space. Chef Ron Siegel divulges to the Chron that the new name will be Parallel 37, referencing the latitude line that runs through the Bay Area. As for the concept, there’s no new news there — we had heard earlier that the idea was do something more casual, with a new bar program, but still with high quality food and some emphasis on luxury, without all the intense plating. All that Siegel adds here is that there will now be a 46-seat bar area that is intended to be more lively and not so “hush-hush” and library-like as the Ritz’s former bar was. [Chron, Earlier]
