Former Dallas chef and Top Chef All-Star Casey Thompson has actually not been at the helm of a restaurant since finishing her stint on Top Chef Season 3. She’s been living under the radar in the Bay Area for the past three years, “working for various wineries pairing wines with foods selected from local farms,” as she reports on her website. “I learned a tremendous amount,” she says, and she also took a job as the US Ambassador for Terrazas de los Andes, a Moet-Hennessey brand. She hinted to Eater Dallas recently that she was working toward opening a Napa Valley restaurant sometime soon, and now the Chron confirms the news, noting that the project is probably a year out. Fans can see Casey, however, on October 1 at the Chase Family Cellars 2011 Harvest Party, doing a live presentation alongside Dave the Butcher from S.F. [Grub Street, Chron]
