As we’ve mentioned before, when Grant Achatz has something on his mind, he usually turns on the video camera. Claiming that the “major misconception with Alinea is that we’re sciencey,” Achatz and team decided to showcase one of the many relationships that the restaurant has with local farmers. There is an annoying high pitch sound throughout the whole clip, but it’s probably worth watching just to see that, sure enough, there are farmers and actual vegetables present. This should silence at least one critic, who believed that the restaurant’s food was “less cooked than willed into existence.” Check out the video below.
