Though he realizes that Paris Club “wasn’t built with me in mind,” Phil Vettel still gives the new restaurant two stars. “I suspect it’s not Brasserie Jo I miss so much as my youth,” he admits, though luckily he finds that you can take a “trip down Memory Lane by ordering the steak tartare, skate wing in brown butter and the Alsatian apple strudel.” The newer dishes are “smaller,” “lighter,” and meant to be shared. Initially concerned that The Palm would “lose some of its character” when it moved to the Swissotel, Pat Bruno fortunately finds it “lighter and brighter” and still a “well-run operation.” He admires that it is consistant, and that it hasn’t “fallen into that small-plate deep well.” He likes all of the lobster dishes, and thinks that the bone-in ribeye is “up there with others I’ve had around town,” even if it was missing the “deeply rich mineral flavor that I am used to with a dry-aged steak.” [Sun Times]
