Beginning this month, Coi has cut Tuesdays out of their schedule, and the restaurant will now be open only Wednesday through Saturday, 5:30 p.m. to 10 p.m. Chef-owner Daniel Patterson explains that the extra day is meant to help the kitchen develop new ideas and do more foraging and preserving work. “The new schedule will allow also us to devote one day a week to creativity, research, and technical refinement,” he says. “Our cooks can spend the day on a farm or ranch, learn about an obscure ingredient, or research the history of a dish or a cooking process.”
Also, Coi underwent a bit of remodeling to the entryway during their recent July 4 hiatus, and a new glass door is on its way, with the whole finished entry scheduled to be complete by August 10.
