What to Eat at Ethyl’s Beer and Wine Dive, Opening on Sunday in West Town

Sure, Scott Harris has opened up a lot of restaurants over the past year. It’s just that most of them have been Italian joints, which makes sense from a man who helped make Francesca’s a successful regional chain. So, what are we to make of Ethyl’s Beer and Wine Dive, which is set to open on Sunday, June 19th in the West Loop? Unless you count the mac and cheese — which does come sprinkled with Grana Padano — there isn’t even pasta on the menu. What is there? Well, just like any good dive, you can bet there’s a burger or two.

The menu was actually created by executive chef Jaysen Euler, and he’s describing the offerings as “chef-driven bar food with soul.” For appetizers, the menu features pulled pork nachos, onion rings, wings, and deviled eggs. There are a few salads, along with three different burgers. That said, the heart of the menu seems to be “Ethyl’s Classics,” where you’ll find hickory smoked Duroc back ribs, chicken & waffles, and bacon and eggs with house cured pork belly.
