Sedlar Tackles Animal’s Truffles and Chili from Chasen’s

It’s not just Emeril scoping out L.A.’s originals these days. Tomorrow night, Los Angeles magazine is celebrating its 50th anniversary with a private party catered by John Rivera Sedlar. For the fete, Sedlar is working on an ambitious menu that riffs on L.A.’s classic eats and revels in honoring the city’s legendary chefs and restaurateurs.

Sedlar’s menu traces the evolution of our dining scene, starting with chili from Chasen’s and a Cobb salad from The Brown Derby, paying homage to Mauro Vicente’s Rex, and even bringing back pastrami tacos from his own Saint Estèphe, which also kindasorta gives a nod to Langer’s, we’re going to add for no good reason. After a dip into Cali cuisine at Trump’s, Sedlar highlights the “punk rock aesthetic” of Animal with chocolate and bacon truffles. The bad news is the event is private, but we have the menu below so you can at least read Sedlar’s brief history of L.A. as told through a few of its famous dishes.
