Grant Achatz’s Next Ends Paris 1906, Plans to Release Epic Pay-What-You-Want e-Book

Next’s three months of Paris 1906 may be ending tonight (can you believe it?), as it makes way for that futuristic Thai menu, but the kitchen won’t be burning all the research it put in. Instead, the restaurant announced on Facebook that it will be releasing an e-book in August, documenting the whole experience. According to the message, the Paris 1906 e-book will showcase “complete and detailed recipes of every course, step by step pics, commentary from the chefs, and a few dishes that didn’t quite make it to the menu.” Interestingly, they’ll be going the Radiohead route, offering the download for “whatever you want.” That said, 20 percent of all sales over $5 will go to “Head & Neck cancer research,” so we hope you feel at least a little guilty if you don’t pay anything.
