We already told you about Nick Curtain’s departure from Compose, and now comes word that three other restaurants have new folks helming their kitchens. Goat Town gets Jessica Wilson, formerly sous-chef at A Voce, as well as a menu revamp; look for dishes like eggs and roe made with goat’s-milk butter, and changing seasonal specials. The Times has the news that Brad McDonald (Essex House, Per Se) is taking over as executive chef at Colonie in Brooklyn Heights, following Alex Sorenson’s departure; the paper also mentions that Jaff Hom, who’s worked with Geoffrey Zakarian in Las Vegas and elsewhere, is the new executive chef at the Lambs Club.
