IOTA Coffee and Bakery might be the most ambitious coffee destination breaking into L.A. yet. With Eton Tsuno, the passionate caliph of caffeine, on board as head consultant, the new bakery and cafe of glass walls, murals, and spotless stations will roast its own seasonal, small producer-sourced micro-lot beans in a 15 kilo Renegade Roaster to be brewed through a pour-over method, Siphon, or a “super-customized” La Marzocco. What else?

IOTA will also be a bakery, offering Asian breads and pastries baked three times a day, as well as sandwiches, soups, and salads on a breakfast, lunch, and dinner menus, all served in a European cafeteria-style atmosphere. In addition, there will be separate coffee and tea labs upstairs where tastings and classes will be held regularly, a counterpoint of sorts to the spacious outdoor back-patio with nothing but relaxation as its mission. As if that’s not enough, IOTA will also serve as a neighborhood art gallery and retail store. Tsuno is hoping for a July 5th opening date for IOTA. Take a look at our slide show to see what awaits.
