We already know Tony Rim is opening an offshoot of his Midtown Village sushi spot, Raw, in what was supposed to be Speck at the Piazza. What we didn’t (until today) was what’s in store for Speck’s would-be chef Shola Olunloyo. Turns out, it’s business as usual — turning out amazing and exclusive meals with Studiokitchen and consulting on other restaurant projects. Today the Insider reports that Gordon Dinerman, the brains behind the forthcoming Passyunk Ave. craft beer and pizza joint, Birra, has signed Olunloyo on to tweak the restaurant’s menus. [Insider]
