Big pig news from the USDA: They’re officially granting everyone permission to cook pork to only 145 degrees — that’s medium, baby. The previous guidelines suggested cooking cuts like loins and chops to an infernolike 160, but now the government is totally cool with letting you keep them pink and juicy in the middle. Still, when it comes to cuts like pork belly, you’re gonna want to just braise that thing until it melts into a delicious chunk of soft, jiggly tenderness.
