What to Eat at Boxing Room, Opening in a Few Weeks

We’ve been tracking the progress of Absinthe’s new up-the-block off-shoot Boxing Room (399 Grove Street, the former Citizen Cake) since we first caught wind of it last year, and now it’s just about set to debut at the end of the month, as Eater reports. New Orleans-born chef Justin Simoneaux (formerly of the Moss Room at the Academy of Sciences) reveals his draft menu, which is, as promised, pretty straight-up N’Awlins, with Crawfish Etouffé, deep-fried alligator, and stuffed mirliton — a Creole-by-way-of-Mexico dish involving a chayote squash usually stuffed with crab or shrimp, but in this case might be the sole vegetarian entrée?
