Hooray to Craigie on Main’s Tony Maws for winning a much-deserved James Beard award last night. But the honor hasn’t gone to his head.
Maws noted in his acceptance speech that he’ll be “back on the line” tonight.
“We work our asses off and anytime someone applauds I think it’s fantastic, but it’s not why we do it,” Maws told the Herald. He just wants to “keep making more people happy.” Chances are he’ll be listening to the Stones’ aptly titled Exile on Main Street while doing it; he told Bon Appétit that it’s his favorite kitchen soundtrack.
