Bibou’s Pierre Calmels Gets the Zama Treatment

It looks like Bibou’s Pierre Calmels is the next of Philly’s chefs to get a sushi send up, courtesy of Zama’s Chef Hiroyuki “Zama” Tanaka. Back in April, Zama teamed up with Marc Vetri for a limited run special crunchy eel roll. According to the restaurant’s blog, he joined forces with Calmels to produce a Bibou roll for a follow up. It’s made with extra large escargot sauteed with shallots and shiso in a soy dashi butter placed over open faced tempura, haricots verts, and fennel maki, and topped with edamame and shiso. As with the Vetri roll, which Zama donated proceeds from to the Vetri Foundation’s ongoing Alex’s Lemonade campaign, a portion of sales from the Bibou roll will benefit Children’s Hospital of Philadelphia.
